Super Simple Mango Chutney

For me, it dosent get any better than a fresh, homemade mango chutney, when you have a beeautiful ripe, organic mango on hand!!

There are many variations of mango chutney out there, but this has become my personal go-to version, using a good quality ready-made curry paste . packed with flavour!

I’ve been incredibly lucky since moving to Ibiza, that I get to indulge in gorgeous tropical fruits over Summer.
Since Mangos are sweet, nourishing, cooling and cleansing, they become a serious ally in summer and late summer when heat /pitta tends to accumulate in our bodies. Plus their sooo insanely scrumptious right?

All you will need for this simple and easy mango chutney is the following:

1 x large Ripe Mango - preferably organic
1x Approx 1 tsp of Pataks Curry Paste - Masala or Curry . OR your favourite Curry or Garam Masala paste.
1x Pinch of salt
1x 1/2 a fresh lime, squeezed
1x 1 tablespoon finely minced ginger root
OPTIONAL: If Mango is not as ripe or you wish you to have it sweeter, add muscovado /coconut sugar / cane sugar to taste.

Combine all of the ingredients in a medium saucepan. Set over medium-low heat and cook, covered, for 30 minutes.
Store in a sealed container and keep refrigerated.
Consume within 3-5 days.

Enjoy with your favourite crackers, chappatis or flat breads, curry dish & rice, veggies, salmon and chicken .
