Soul Warming Turmeric & Root Vegetable Stew


One of the many perks of living in Ibiza over the winter season is having access to gorgeous local, organic produce.

One of mt favourite finds so far has been this local winter squash - which is officially one of the best tasting squashes, Ive had in my life. So vibrantly coloured too!

Choosing the best way to highlight this beautiful, vibrant ingredient had to be in a comforting bowl of steaming vegetable stew with all the herbs .

While there wasn’t an exact recipe that I followed (as I often find myself intuitively adding in what feels right in my recipe making process.)

This was definitely one of those meals where you just add it all into a big pot and let it works its magic!!

This was roughly enough for two servings.
Half of an organic butternut squash
A few peeled and chopped carrots and potatoes
Some ground turmeric
Ground black pepper
A few sprigs of resh rosemary, sage and a few dried curry leaves
2 x vegetable stock cubes
Enough water to cover vegetables
A large casserole pot or slow cooker and let it cook on low for a few hours until it's all tender and delicious!!

I totally enjoy this with a side of warmed spelt flat bread topped with lots of melted butter!!
